Universal Ruth is a Caribbean restaurant, which is true and also not the whole story. The jerk chicken is the reason people walk in the first time. What keeps them coming back is that Ruth built the place to feel like home for everybody, not just the people who already had one here.
She didn’t learn to cook, so much as get raised in it
Ruth was born and raised in Haiti, and she came up in the kitchen the way the best cooks always have, at the elbow of a woman who loved her. When she moved to Miami young, it was her aunt who raised her up at the stove, a woman who was like a mother to her, who owned multiple restaurants and put a spoon in Ruth’s hand and a standard in her spirit. Everything she serves today came up through those kitchens, learned from the women who fed her first.
Where the mission came from
Then came Michigan, and the silence of a table without home on it. Ruth couldn’t find food that tasted like where she came from. No pots that smelled like her aunt’s kitchen. When her brothers moved north and came to visit, they would cook for her, the old recipes, just to remind their sister of home. Picture that: grown men at a stove, feeding homesickness back to sleep.
She decided nobody else in this city should have to wait for their brothers to visit. So she opened Universal Ruth to bring the world’s foods to a table near you. The name is the mission. Caribbean cuisine is the front door, with a little bit of every culture waiting behind it, and the universe greets you the moment you walk in.
The food
Jerk chicken past midnight. Sweet plantains. Soursop shakes for the ones brave enough to ask what soursop is. The menu is Caribbean at its heart and curious everywhere else, cooked from recipes passed down through the women who raised her and served with the same joy they were passed down in. Longtime regulars have their order. First-timers get walked into something new.
A kitchen that stays lit
Most of the corridor goes dark early. Universal Ruth doesn’t. Ruth keeps the kitchen open late because home doesn’t run on a nine-to-five, and the people who need a hot plate after a long shift shouldn’t find the lights off. Every time she cooks, she’s inviting you into her world, her universe, her home, and her family.
